Vegetarian bolognese sauce recipe

Let’s prepare a vegetarian variant of this traditional sauce originally from Bologna.


  • 5 Tbsp olive oil

    extra virgin

  • 200 ml Red wine

  • 2 Onions

  • 800 grs Tomato pulp

  • 4 Carrots

  • 3 cloves garlic

  • 1 leave Laurel

  • 150 grs Textured Soy Protein

  • 500 ml Vegetable broth

Cut and prepare all the ingredients.
Place the soy protein in a pot with boiling water. Then cook it for 10 minutes.
Drain the soy protein.
Put olive oil in a pot and cook the onion.
Add the soy protein and the wine. Cook for 5 minutes.
Add the tomato pulp and the carrots.
Put the vegetable broth and mix. Cook for 3 hours on medium heat.
Remove from the heat and set aside.
Serve with your favorite pasta.

  • It can be portioned and frozen.
  • This sauce can be used for any type of pasta, including lasagna.
