Vegetarian bolognese sauce

Ingredients

5 Tbsp Olive oil extra virgin
200 ml Red wine
2Onions
800 grs Tomato pulp
4Carrots
3 clovesGarlic
1 leaveLaurel
150 grs Textured Soy Protein
500 mlVegetable broth vegetable broth recipe

Instructions

Cut and prepare all the ingredients.

Place the soy protein in a pot with boiling water. Then cook it for 10 minutes.

Drain the soy protein.

Put olive oil in a pot and cook the onion.

Add the soy protein and the wine. Cook for 5 minutes.

Add the tomato pulp and the carrots.

Put the vegetable broth and mix. Cook for 3 hours on medium heat.

Remove from the heat and set aside.

Serve with your favourite pasta.

Notes

  • It can be portioned and frozen.
  • This sauce can be used for any type of pasta, including lasagna.
