Melt the chocolate in a double boiler. Fill the bottom pot of a double boiler with water and bring it to a simmer. Place the chopped chocolate in the top pot and stir until melted and smooth. This will create a uniform chocolate base for the truffles.
Stir the melted chocolate. Once the chocolate is melted, remove the top pot from the double boiler and stir the chocolate.
Combine cream cheese and powdered sugar. In a separate bowl, beat the softened cream cheese and powdered sugar together until light and fluffy.
